Pulled Pork In Crockpot with Homemade Rub


INGREDIENTS:

Pork Butt (leave the fat on it for now)

1 Large Onion (any kind roughly cut)

4 Garlic Cloves (I use the stuff in the jar)

RUB:

8 Tbsp Light or Dark Brown Sugar

8 Tbsp Kosher Salt (Needs to be Kosher)

4 Tsp Ground Cumin

2 Tsp Ground Cinnamon

1/2 Tsp Cayenne

DIRECTIONS:

Put sliced/chopped onion and garlic in bottom of crock pot.

Take the pork butt out of the packaging and dry it off, then set it in the crock pot, fat strip down.

**(Our store sells what they call 1/2 butt and whole butt; if I cook 1/2 butt I use the measurements above; if I cook a whole butt then I double the measurements above).

In a separate bowl mix the rub

When the rub is mixed well, rub it all over the pork butt; top and sides, don't worry about the bottom; coat it very well.

Put the lid on and set it on low and let it cook for 10-12 hours.

When time is up take the pork butt out of the crock pot and set it on a cutting board or on a cookie sheet. **(Will likely fall apart taking it out of crock and will have greasy liquid drain off onto the board)

Take 2 forks or your hands and start pulling the meat apart. As you find a clump of fat throw it away.

If you want to, you can save a little of the rub earlier and sprinkle it over the meat at this point.

You can eat this pork on rolls, or just eat it with some side veggies.

We usually just eat ours right off the platter standing by the counter, it is so yummy!!!
