White Chicken Chili


Mother Nature just can't seem to make up her mind here in the deep South lately. A few days ago we had a high of 70, today we have a high of 50. Now.......I'm a transplanted Yankee so I don't mind the colder weather, but to watch the folks down here is a funny sight, they bundle up like they're in Alaska.

Anyways.....decided to make White Chicken Chili today, and boy oh boy did it turn out great. We have some nice warm, filling, home-cooked vittles for this cool weather.

Here's the recipe:

Ingredients:

1 Bag frozen Tyson chicken tenderloins

1 Large yellow onion

2 Tbsp chopped or minced garlic

3 Cans Great Northern Beans drained and rinsed

1 Quart chicken broth (I used homemade broth from my freezer)

4 Cans cream of chicken and herb soup

2 Cups water

(All spices are to taste)

Salt & Pepper

Cayenne Pepper

Oregano

Cumin

Onion Powder

Instructions:

Pour a little olive oil in a skillet, put the chicken in, sprinkle with a little of all the spices and cook thoroughly; let cool and chop up in whatever size chunks you prefer.

In a large pot pour in the broth, water and soup; warm through.

Chop the onion and saute it in the skillet with a little salt and pepper; when it's almost done add the garlic.

Pour the onion and garlic mixture into the pot; add the chicken and beans to the pot; warm through.

Taste it and decide if you want to add any more spices.

You can also add other items to the pot if you choose, like corn or potatoes or even rice

When you serve it, you can top it, here are some examples:

jalapeno peppers, a splash of cream, a dab of sour cream, some shredded cheese
