Sausage & Pasta

This recipe cannot be screwed up!

Quantities of all ingredients are as you prefer. The way the ingredients are cut are up to you, if you like large pieces of veg or bite-sized pieces.


I use whatever kind of sausage is on sale (smoked, beef, conecuh)

onions

green peppers

canned petite diced tomatos

black pepper

basil

garlic powder

1/2 cup brown sugar to cut the tomato acidity


First things first - pull out your pasta pot, fill it with water and turn the heat on; when it starts to boil add your favorite type of pasta. That's the nice thing with this dish, you can use any type of noodle. A 12-16 Oz bag/box is what I usually use. When it's done, drain it well and set it aside.

Slice up 1 package large link sausage (like the fat conecuh or polish, something along those lines) I like to get a kind that's precooked, it makes dinner even quicker

1 medium onion sliced or diced (your choice) and a chopped up green pepper.

Put those in a skillet with just a little bit of EVOO, just to keep the onions and green peppers from sticking until the sausage starts to put off some grease. Let those simmer for a little while and stir them frequently so the onions don't stick and burn.

Simmer it until it's cooked through (unless it's precooked sausage, then just warm it through and make sure the onions and green peopers are no longer crunchy.

Add a sprinkle of salt and pepper, drain 1 can of tomatos and dump those in (your choice of what kind - Rotel, roasted diced, roasted with herbs...whatever your taste-buds desire), I use petite diced tomatos.

Sprinkle in some basil and oregano. If you have fresh that's great, if not use flakes; that's what I use and it's fine.

Now here is where my husband curls his nose when he sees me do it - but when he doesn't see it, he doesn't complain LOL. I add about 1/4-1/2 cup of brown sugar. The sugar helps to cut the acidity of the tomatos.

Let that simmer for a few minutes until the tomatos look warmed through. Then scoop some noodles into a bowl and spoon some of the sausage mixture on top. It's hot, it's filling, it's quick and it's cheap. Left-overs warm up wonderfully as well.

You can add things like jalapeno peppers, mushrooms, shrimp, broccoli; or you could even make this with chicken instead of sausage or rice instead of pasta; use your imagination and enjoy!
